Cheesy French Toast

This is a layered version of the simple everyday French Toast we all make, with melted cheese oozing out of it.....

For this u need :
2 slices of Bread
2 Eggs
1 Cheese Slice
1 spn. Mayonnaise
1 tspn. Mustard sauce
1 tspn. Red Chilly sauce

Beat the eggs till light & fluffy with salt & pepper to taste & keep aside
Mix together the Mayonnaise, Mustard sauce & Chilly sauce to make a paste
Apply this paste on both the slices of bread, put the cheese slice in-between them & make a sandwich
Heat some butter/oil in a flat pan
Soak the sandwich completely in the beaten eggs & immediately put in the pan
Let it cook for a minute on one side & then flip to cook the other side
Pour equally on top if u have any extra egg mixture left & cook till golden brown on each side
Cut into 3-4 strips & serve immediately while the cheese is melting hot !

Burritos

These are Mexican Wraps..... mix flour Tortillas are made & filled with a mixture of various vegetables & beans....

To make Tortillas :
Take Wheat flour, Refined flour (maida), & Corn flour (makki ka atta), all in equal quantities
Add 2-3 spns. of oil, pinch of salt & black pepper & knead into a dough using water
Use this dough to make large size but very thin Tortillas (Chapatis)
Partially cook them so that they remain soft & keep aside

For the Filling :
French beans sliced diagonally
Capsicum thinly sliced into 1" pieces
Red & Yellow Bell Peppers
Carrots sliced like capsicum
Onions - Chopped - 2 medium
Tomatoes - Chopped - 1/2 cup
Baked Beans Tin - 1/2 cup
Red Kidney Beans - boiled - 1/2 cup (rajma)
Tomato Puree - 1/2 cup
Salsa sauce, Mayonnaise, Garlic cheese spread, a dash of mustard sauce

To Prepare the Filling :
Heat some oil, saute the onions, add carrots, french beans & saute for 5-6 mins.
add capsicum & bell peppers & saute for another 4-5 mins.
now add tomatoes, kidney beans, baked beans & tomato puree
Now add salt, black pepper & red chilly powder - all to taste & mix well
Cook for another 5 mins. on medium heat, u may sprinkle some water if required to avoid burning
Remove & keep aside to cool down to room temperature

To Make Burritos :
Take equal quantities of Mayonnaise & Cheese spread & mix with a dash of Mustard sauce (optional)
Take a Tortilla, spread some salsa sauce lightly over it, place the filling horizontally in the middle & squeeze out a spoonful of the mayo & cheese mixture on top of the filling
Roll it up to form a Wrap or Burrito
Prepare all in the same manner & keep ready
Heat up a grill or a pan, put a bit of butter or oil & heat the Burritos in it just for a moment
Cut the roll into two & serve immediately !

Mexican Curry & Rice Meal

This is a combo-meal dish consisting of a wholesome Mexican curry with light rice to make a complete meal

For the ingredients u need :
For the Rice :
Boiled rice about 4 cups
1 can Green Giant corn niblets
Spring onions - greens & white chopped separately
Salt & black pepper to taste

For the Curry :
Carrots - round sliced
Capsicum, red & Yellow bell peppers - diced app. 1" size
French beans - sliced diagonally about 1" pieces
2 medium size Onions - cut into 4
Tomato puree - 1 small cup
1/2 cup boiled Rajma / kidney beans
Soya sauce, Vinegar, Red & Green Chilly sauce, Chilly garlic paste, Whole dry red chilies, Salt & crushed Black pepper, Cornflour

To make Curry :
Heat oil in a pan / kadai, add 2 whole red chilies broken into halves, as soon as they start changing color, add the onions & saute for 2-3 mins, now add the beans & carrots & saute for another 3-4 mins, now put in all the capsicum & bell peppers & saute for another 2 mins.
Now add the rajma & tomato puree & cook for 5 mins till the water content of puree dries up
Add salt & black pepper to taste, 1 spoon chilly garlic paste, 2 spns. vinegar, 2 spns. soya sauce, red chilly sauce & green chilly sauce to taste & mix..... Authentically, Mexican Food is supposed to be spicy (full of red chilies), but still u can always go according to your own taste
Now add about 3 cups of water & let it all come to a boil, cover & leave it to simmer for some time
Add 2 spns. cornflour to a cup of water & add to this curry stirring continuously
Let it simmer till u get the desired consistency of the gravy
Garnish with greens of spring onions & serve hot with rice.

For the Rice :
Take 2 tbspns. oil in a large wok
Add the chopped whites of spring onions & saute for just a minute or so, don't let it change color
Put in whole contents of the green giant corn can
Add salt & black pepper to taste
Now add the spring onion greens & boiled rice
Toss it all lightly on high flame for about 2 mins. so that it gets well mixed
Remove from fire & serve when desired

Plate it up together as a combo-meal & serve hot !

Mix Lentils Waffles

Unlike the sweetened waffles available everywhere, this is my version of it - spicy & healthy !!

For these u need :
1/4 cup Chana dal
1/4 cup Mungi-chhilka dal (split green lentils)
1/4 cup Ma-chhilka dal (split black gram)
1/4 cup Urad dal (white lentils)
1/4 cup Besan (gram flour)
1/2 teaspoon Baking Soda
Very finely chopped mix vegetables - onion, carrot, capsicum, cabbage, beans

Wash & Soak all the Dals (lentils) in water for 4-5 hours, then throw away excess water & churn them in a mixer with just enough water to make a thick coarse paste
Add the besan, chopped vegetables, baking soda, salt to taste, black pepper, red chilly powder, a dash of dhania powder/ garam masala powder
Add 2 tbspn. refined oil & Mix everything well together
Now in a preheated waffle iron/tray put enough quantity to form a slightly thick layer & bake till the waffles are well cooked & crisp
Serve hot with sauce/ green chutney/ tomato-chilly chutney as per choice !!

Salami Pizza

For this u need :
Pizza base
Salamis
1 Onion - sliced
Red, Yellow & Green bell peppers - sliced / chopped (about 1 small cup total)
3 Tomatoes - pureed in a blender
Butter, Cream Cheese spread, Mozzarella

To make the Pizza Sauce :
In a pan, add the pureed tomatoes with a pinch of salt, let it cook & when the water almost dries up add 2 spns. olive oil to it & mix
Add black pepper, oregano, chilly flakes(optional) to taste, put in 3-4 spns. tomato ketchup & 1 spn. chilly garlic sauce, 3-4 spns. water & mix well

Take the sliced onions & chopped peppers in a bowl & rub a spoon of olive oil on them using your fingers, add a pinch of salt n black pepper to it

Now take the Pizza base, spread a thin layer of butter on it, then a generous layer of cream cheese over it, now spread a thick layer of the pizza sauce made earlier on this, top with a layer of Salamis & put some of the onions & peppers on this, sprinkle some oregano & chilly flakes if u like & cover with mozzarella

Bake in a preheated oven till ready & serve HOT !!

Trifle Pudding

For this u need :
1 vanilla sponge cake
Fresh Fruits as per choice : Apple, Banana, Mango, Kiwi, Grapes, Strawberries, Pear, Cherries, Pineapple, etc.
1 pkt. Jelly, flavor of ur choice
1 large cup Cream
Marie Biscuits
Chocolate Spread
Chop all fruits & keep aside
Prepare Jelly as per instructions on the packet & let it set in the fridge

Take a glass dish
Layer it with the slices of cake & sprinkle some fruit syrup on them to make it moist (the syrup which is there in the can of cherries or pineapple slices)
Now in a separate bowl coarsely grind the marie biscuits & mix with the chocolate spread using ur hands so that it forms like a sticky crumble
Cover the cake with this biscuit crumble to form another layer
Now spread all the chopped fruits on this to form a thick layer
Cut jelly into cubes & cover the whole thing with it
Beat the cream with some powdered sugar to taste till its light & fluffy
Pour the whipped cream on top & allow the pudding to chill
Serve Chilled !!

Focaccia-Corn Sandwich

For this u need :
Focaccia Bread
1 Potato boiled & grated
Very thin slices of Paneer
1/3 cup frozen corns - microwaved for 3 mins
1/3 tin Sweet Corn Cream Style
1 Onion  finely chopped
1/2 cup Cabbage finely chopped

To Prepare the Filling :
Take a tbspn. of olive oil, saute the onions till light golden, add crushed green chilies to taste, add the cabbage & saute further, then add the sweet corn & the corn kernels, put salt, black pepper powder, chilly flakes (optional) & mixed herbs, all to taste & continue cooking till all the water dries up completely & it turns into a thick mixture, keep aside

Now Slice the bread horizontally
Apply green chutney on one slice & red sauce of ur choice (tomato ketchup/ hot & sweet/ schezwan) on the other
Place thin slices of paneer on the bread base slice, now put a thick layer of the mixture made above, spread a thin layer of grated potato mixed with a pinch of salt & pepper, sprinkle some grated processed cheese or a cheese slice & cover with the top slice of bread
U may serve these sandwiches as it is or grill them lightly as u like !!

Vegetable Idlis

For the Idlis u need :
2 cups Suji (semolina)
2 spns. Eno fruit salt
1/2 cup curd
Salt & black pepper to taste
1/2 Carrot ,1/2 Capsicum, 2-3 French beans, 1/2 cup cabbage, all very finely chopped
1/2 teaspoon Red chilly flakes (optional)
Water
Mix well everything together in a bowl with just enough water to make a smooth batter of a medium consistency, not thin
Let it stand for a minute & immediately pour into greased Idli moulds
Microwave for about 4 mins., check & if required give it another minute so that idlis are properly cooked
Let it stand for 5 mins. before u de-mould them
Cut each Idli into halves or quarters & keep aside

In a pan/ kadai take 2-3 spns. oil & heat on medium flame
Add mustard seeds (rai or sarson) & let it flutter for a minute
Now add chopped green chilies to taste & few leaves of Karipatta (curry leaves), saute for a minute
Add 2 chopped Onions & saute for till they turn golden
Now add 1/2 cup tomato puree & a pinch of salt & black pepper powder
Add a spoonful of chilly sauce (optional) & 2 tbspns. water
Mix everything well & while on flame only toss the idlis into this
Mix lightly for 2-3 mins. till each piece is well coated & absorbs in all the flavors
Serve hot !!

Gold Coins

For these u need :
8 slices of Bread
4 medium sized Potatoes - boiled & mashed
1 small onion very finely chopped
1 small carrot very finely chopped
1/2 capsicum finely chopped
3-4 french beans very finely chopped or 1/2 cup boiled peas
green chilies to taste

Mix all the vegetables with the boiled & mashed potatoes, add salt, red chilly powder & black pepper powder to taste, green chilies (optional), coriander & mix everything together
Take the bread slices & with the help of a round pastry cutter or a katori cut them into rounds
Mix 2 spoons maida & 2 spoons cornflour & a pinch of salt n pepper with water to form a smooth running batter
Apply the potato & vegetable mixture generously on each round slice of bread, dip this side only into the batter & deep fry in hot oil till golden & crisp
Serve hot with tomato/mint chutney !



Kiddie Cup-Cakes

For this u need to make cup-cakes
Today i'll give u the recipe for an EGG-LESS cake as a cake recipe with egg has been already given before so if u want u may follow that one also

For the Cake Batter :
125 gms. maida
4 heaped spns. cocoa powder
1&1/2 teaspoon baking powder
1/2 teaspoon baking soda
4 tbspns. unsalted butter or malai
3/4 tin condensed milk (milkmaid)
1/2 cup powdered sugar

If using malai, beat it till it thickens like butter & then for just about a minute melt it on a low flame, as soon as it starts melting remove from flame & let it cool for 5 mins.
Add the milkmaid to it & beat well, then add the powdered sugar & continue beating
Sieve together the maida, baking powder, baking soda & cocoa powder
Keep adding these gradually to the liquid & continue mixing gently so that no lumps are formed & u get a smooth batter
If it is too thick add 3-4 tbspns. of water as required
The batter should be smooth but thick in consistency
Immediately pour it in the greased & dusted cup-cake moulds, only fill in the mixture till 2/3 of the mould's height, not more as it needs space to rise
Bake in a preheated oven at 180 degrees for approximately 10-12 mins. or until done
Let them stand for 2-3 mins. after they are done, then remove them from the moulds & let them cool down to room temperature for about 2 hrs.

NOTE : U can use this same batter to make a normal size egg-less cake also instead of cup-cakes
The only difference is that it will take approximately 25-30 mins to bake as the quantity is large in one mould

For the Decoration :
Take whipped cream or u may beat the fresh cream till it becomes light & fluffy & u get a peaky consistency
Horizontally slice each cup-cake from the middle to get 2 rounds
Take some sugar syrup (chasni) & spread about 2 spns. on each cake slice
Now place the bottom slice & put a tablespoon full of cream on it, sprinkle some Chocolate-chips & cover with the other slice, again spread enough cream on it & sprinkle some Gems & Chocolate-chips on it
Cut an Oreo cookie into half & place it standing on the top in the center of the cup-cake
Refrigerate for a while or till u serve !
