Mexican Curry & Rice Meal

This is a combo-meal dish consisting of a wholesome Mexican curry with light rice to make a complete meal

For the ingredients u need :
For the Rice :
Boiled rice about 4 cups
1 can Green Giant corn niblets
Spring onions - greens & white chopped separately
Salt & black pepper to taste

For the Curry :
Carrots - round sliced
Capsicum, red & Yellow bell peppers - diced app. 1" size
French beans - sliced diagonally about 1" pieces
2 medium size Onions - cut into 4
Tomato puree - 1 small cup
1/2 cup boiled Rajma / kidney beans
Soya sauce, Vinegar, Red & Green Chilly sauce, Chilly garlic paste, Whole dry red chilies, Salt & crushed Black pepper, Cornflour

To make Curry :
Heat oil in a pan / kadai, add 2 whole red chilies broken into halves, as soon as they start changing color, add the onions & saute for 2-3 mins, now add the beans & carrots & saute for another 3-4 mins, now put in all the capsicum & bell peppers & saute for another 2 mins.
Now add the rajma & tomato puree & cook for 5 mins till the water content of puree dries up
Add salt & black pepper to taste, 1 spoon chilly garlic paste, 2 spns. vinegar, 2 spns. soya sauce, red chilly sauce & green chilly sauce to taste & mix..... Authentically, Mexican Food is supposed to be spicy (full of red chilies), but still u can always go according to your own taste
Now add about 3 cups of water & let it all come to a boil, cover & leave it to simmer for some time
Add 2 spns. cornflour to a cup of water & add to this curry stirring continuously
Let it simmer till u get the desired consistency of the gravy
Garnish with greens of spring onions & serve hot with rice.

For the Rice :
Take 2 tbspns. oil in a large wok
Add the chopped whites of spring onions & saute for just a minute or so, don't let it change color
Put in whole contents of the green giant corn can
Add salt & black pepper to taste
Now add the spring onion greens & boiled rice
Toss it all lightly on high flame for about 2 mins. so that it gets well mixed
Remove from fire & serve when desired

Plate it up together as a combo-meal & serve hot !
