Lasagne

U'll need an 8" by 8" bake n serve dish
Take 6 sheets of Lasagne & boil them for about 6-8 mins in a large pot of water with 1 spn salt & 2 spns oil
Once done, strain & rinse with tap water & apply oil on each sheet so that they don't stick together

To make the Red Sauce :
Chop 1 large Onion, 1 Capsicum & 2 Tomatoes, some Zucchini, take 3 Tomatoes & puree them in a blender
Take about 3-4 spns of olive oil, saute the onions till they turn pink, now add capsicum after 2 mins add zucchini & tomatoes, after 2-3 mins add the tomato puree & cook for another 3-4 mins, now add some salt, black pepper, oregano, basil & chilly flakes mix all these well, now add about 1 cup water to this & boil this sauce for 2-3 mins.

If u want to make a NON-VEG lasagne :
Make the red sauce as mentioned above BUT instead of capsicum & zucchini add Chicken mince / Mutton keema to it & do not add chopped tomatoes, only the puree is enough. Rest of the recipe remains same. No need to add water also as the meat cooks in its own juice.

To make White Sauce :
Take Carrots, French beans, Bell peppers, Baby corns, Broccoli, Eggplant, chop & saute in olive oil for 3-4 mins, take some mushrooms chop & saute in olive oil till brown, half cup frozen corn niblets boiled for 2-3 mins ( U can use all or any combination of these vegetables )
Now in a pan on very low heat add 1 spn butter & add 1 heaped spn of maida immediately to it, mix well, DO NOT let it turn brown, Now add 150 ml. of milk to it slowly & stirring continuously for about 2 mins so that no lumps are formed, add salt, white pepper & parsley n turn off heat, add the vegetables & mix well.
Make sure the sauce is not too thick as it is going to be further baked for 15 mins.
If u get lumps churn it in the blender to smoothen it  Or  If it gets too thick while cooking just add some more milk.

Now take the baking dish,
Put half of the red sauce to make a layer in the dish, now sprinkle some Parmesan cheese & some mozzarella on it, cover it completely with 2 sheets of lasagne side by side.
Now put 2/3 of the white sauce on top of it to form second layer n sprinkle both the cheese, cover with 2 sheets of lasagne
Now put the remaining red sauce on it & repeat whole process like first layer, cover with the last 2 sheets of lasagne
Now spread the remaining 1/3 white sauce evenly on top of it & sprinkle both the cheese generously.
Bake in oven at 200 degrees for about 15-20 mins
Switch on the grill for the last 2-3 mins so that the cheese on the top melts & cooks nicely.
When done let it stand in the oven for 2-3 mins & serve hot immediately......
